Suman muriecos is delicious food for Filipinos.  This is a native delicacy that everyone wants.  It looks purple.  This delicacy is well known in Isabela.  It is made from glutinous rice and rice flour and cooked with coconut milk and brown sugar.  The inside of suman muriecos is garnishing with a coconut curd or latik because it is one of the main ingredients.  It tastes has the right sweetness and softness.  It is also wrapped in banana leaves and cooked by steam.  Suman Muriecos is delicious especially if you are accompanied by coffee.  You can eat it for breakfast or snack.  You can also serve it on any occasions such as feasts, baptisms and birthdays.  You can also do this as a business.
For tasty and delicious suman muriecos, here’s a step by step on how to do it.
Ingredients:
4 cups glutinous rice flour
2 cups of rice flour
2 can coconut milk
2 cups of sugar
Banana leaves
Cooking Steps:
For Coconut Curd
1. In a deep pan pour the coconut milk, bring to a boil and let simmer over low heat.
2. When the curd begins to form scrape the sides and bottom of the pan to prevent burn.
3. Stir the curd or latik well until cooked and golden brown.
4. Place the curd or latik in a strainer to drain the oil and set aside.
For Flour Mixture
1. Pour the coconut milk and sugar in a deep pan.  Mix it until the sugar has dissolved.
2. Put glutinous rice flour and rice flour, stir until it melts.
3. Let it cook on medium heat, continue to cook until it thickens and smooth.
4. Turn off the fire and set it aside to cool.
5. Spread the oil on banana leaves.  Spoon 2 scoops of the flour mixture, put and flat it on the center of the banana leaves.
6. Place a coconut curd or latik inside of the flour mixture.  Fold the cooked flour mixture over to cover the fillings (latik).
7. Roll the banana leaves to wrap the flour mixture then fold the both ends together so that it is closed.
8. Arrange the wrapped suman in steamer. Cover it and steam.  Within 30 minutes of cooking this, turn off the fire and remove the steamer on the stove.
9. Ready to serve.  Eat and enjoy !!
