Lechon is originally come from Spain and is known in other parts of the country such as Puerto Rico, Cuba, and America also in the Philippines. Lechon de Leche is particularly attractive with its fatty meat and crispy skin. It cooks on a large pile of charcoal while rotating the pork stick or it can do it also in an oven. On the other hand, this dish has disadvantages so others are only slightly eaten and it is also very expensive. But others cannot stop eating it even though the price is so high because of its delicious taste and it is exactly what they are looking for.

Ingredients:

 1 whole pig
 1 set of cilantro, trimmed
 20 garlic cloves
 1 cup loosely packed fresh oregano leaves
 5 tablespoons salt
 2 tablespoons black pepper
 2 tablespoons ground cumin
 1 1/2 cups olive oil, divided
 4 cups fresh orange juice
 4 cups fresh lime juice

How to cook it:

Step 1: In a blender put the ingredients of garlic, cilantro, salt, oregano, pepper, cumin, and 1/2 cup of olive oil. Pour the lime juice slowly and let it blend until smooth. Transfer it to a container and reserve it temporarily.

Step 2: Put a whole pig into a tray that accommodates the size of a pig. Whisk the remaining marinade mixture, wiping the entire pork portion. Cover the lid and let the marinade mixture soak in the pig for 24 hours.

Step 3: Preheat the oven to 275 ° F. Place a wire rack on a large aluminum foil-lined rimmed baking sheet or roasting pan. Remove the pig from the marinade mixture and place it on the rack. Discard used marinade mixture.

Step 4: Dip the stick into the pig and marinate the reserved 1 cup marinade mixture and the remaining 1 cup olive oil. Roast the pork in a heated oven. For 4 hours let it rotate in the oven while cooking. Increase the oven temperature to 425 ° F and roast until the skin is golden brown and crispy for 1 hour. When it is cooked let it cool for 20 minutes.
