The oyster omelet food is a dish that came from in Teochew origin that became popular on its delicious taste for the native Chaoshan including the Fujian, Taiwan and another part of Southeast Asia such as Thailand and Philippines it’s just because of the influence of Teochew Diaspora. This kind of dish has many versions and differences that exist in the other part of the Southern regions of China.

Taiwanese Oyster Omelet can be prepared for breakfast, lunch, and dinner.  It can also use it in business.  Actually, this dish can be found in night markets in Taiwan.  It is made with fresh oysters.  The taste of these pancakes is the same as those sold at street vendors just without the cool ambiance.
Taiwanese Oyster Omellete is different from the traditional that we make everyday omelets because it is made from potato and tapioca flour batter which really gives a translucent look and slightly chewy.
Follow the cooking process listed below so we can learn how to do it too.
Ingredients:
Ingredients for Sauce:
 1 1/2 cups of cold water
 3 tbsp.  of gluten flour
 2 tsp.  of Ketchup
 5 tsp .of sweet chili in sauce
 1 tsp.  of peanut butter
 2 pinches of cinnamon
 2 pinches of sour plum powder
Ingredients for Omellete
 1 small jar of fresh Oysters
 1 to 2 pcs.  of Egg per omellete
 Fresh leafy Veggies like Taiwan A-Choy
 1 1/4 cups of Water
 1/2 cup of Potato flour
 3 tbsp.  of Tapioca starch
 Sea salt for seasoning
Cooking Process:
STEP 1: Cooking the Sauce
a.  Add the flour and stir it in a pan for 1 to 2 minutes.
b.  Pour slowly the cold water and mix it until the flour mixture will completely dissolve.
c.  Put the rest of the ingredients: the sugar, peanut butter, ketchup, and sweet chili sauce.  Mix everything slowly until it softens.
d.  Add the pinches: the cinnamon and sour plum powder.  Continous to mix well
e.  After a few minutes, the sauce starts to thicken.  If the sauce is not thickening turn off the heat a little bit.
f.  Once the sauce is completely mixed and thick, its time to taste it.  Set aside and keep it warm.
STEP 2: Mix the Omellete batter
a.  In a one medium-size bowl pour the water and put the potato flour and Tapioca starch.
b.  Add the salt to taste.
c.  When your done, just make sure to mix all your ingredients that th batter is becoming completely smooth.
STEP 3: Cooking the Oyster Omellete
a.  Put the pan on the stove and preheat on a low heat medium.  Once the pan is already hot, add the oil and spread it on the pan.
b.  Add the fresh oysters, put the salt and pepper to taste.
c.  Get the spatula and mix the oysters slowly until it is cooked.
d.  Once you’re done, arrange the oysters in the center of the pan.
e.  Widdle or spinning the omellete batter or potato flour batter then pour it inside the pan with oysters.  The potato flour batter is creating a thin layer just like an omellete.
f.  Once the batter starts to cook you notice that the white color changes into a translucent color.
g.  Once it is partially cooked, get the egg and crack it directly over the oysters omellete.
h.  Using the spatula, spread the egg yolks in an interesting shape.
i.  Add the leafy veggies suh as Taiwan A-choy, after a few minutes flipping the omellete and wait until it is cooked.
j.  Transfer the oysters omellete into a plate.
STEP 4: Assemble and arrange the omellete then put in the sauce on the top.
